
Britain's beloved curry featuring tender yogurt-marinated chicken pieces in a rich, creamy tomato sauce spiced with garam masala. The ultimate comfort food that bridges Indian and British cuisine.

Marinate 600g chicken thigh cubes in 200g yogurt, 2 tsp garam masala, 1 tsp turmeric, salt for 2+ hours.
Thread marinated chicken onto skewers. Grill or broil 10-12 minutes until charred spots appear. Set aside.
Heat 3 tbsp ghee or butter in large pan. Sauté 1 diced onion until golden, about 10 minutes.
Add 4 minced garlic cloves, 2 tbsp grated ginger, 2 green chilies (slit). Cook 2 minutes until fragrant.
Stir in 2 tsp garam masala, 1 tsp paprika, 1 tsp cumin, 1/2 tsp turmeric. Toast spices 1 minute.
Add 400g crushed tomatoes. Simmer 10 minutes, stirring occasionally, until thickened slightly.
Blend sauce until smooth using immersion blender. Return to pan over medium heat.
Stir in 200ml heavy cream and 2 tbsp tomato paste. Simmer 5 minutes until sauce is creamy orange.
Add grilled chicken pieces to sauce. Simmer 10 minutes to let flavors meld. Adjust salt.
Finish with 2 tbsp butter (for richness) and 1 tsp dried fenugreek leaves (kasuri methi). Essential!
Garnish with fresh cilantro leaves and a swirl of cream. Prepare steamed basmati rice.
Serve immediately with naan bread, basmati rice, and mango chutney on the side.
